Buy gold, save rice, the sky is falling

I try to keep this site light but there is an issue I feel I must address. The talk show circuit lately has played host to a clique of doomsayers who are out peddling their gold Krugerrands, 50 gallon drums of freeze dried food and other survivalist supplies by playing on peoples fears and foretelling a total collapse of the food supply, among other horrors. They also…

Fun Stuff, Worlds largest things

I was going to write a fascinating piece on organic caviar farming but business has been very good and I'm too tired. I can't let my friends down however so I have gone the route of cheap thrills and even resorted to a dog photos always a hit with this crowd. So here we go, presenting

I recommend a Blog and a liqueur

Doing a Goggle search for a varietal Italian onion I stumbled upon a highly entertaining and informative blog maintained by a young woman named Rachael. I don't think she is a professional chef but she sure is a foodie and her site is full of great recipes and "on point' observations on the food scene. I am going to try one of her recipes at home tonight , a pasta dish made with lemoncello liqueur and chilies she calls "lemon Fire Pasta" and I bet I incorporate one or two of her ideas into our… Continue

Crazy stunt

This "Dinner in the Air" doesn't look like much fun to me. It's nice to have a view while dining but this is ridiculous. I don't know who did it or why but I don't think it will catch on.

Grandma Vaughn's tattered recipe book #2

Tonight I got home and Dolores (my mother in law) was busying her 84 year old self in preparing a beautiful pork roast. I thought I would review her procedure and if this dish is not in your home menu rotation you could give it a try.

Firstly she starts with a boneless pork loin roast meticulously picked out for her by her favorite butcher. She loves to get a nice, peppery quality to her roast so she uses whole black pepper corns which she crushes with a small iron pan on top of her… Continue

Isn't it a pretty picture? Actually those are not our crawdads, but a beer tray of the bugs at Paul's Pirogue in Carencro, Louisiana, one of our favorite restaurants. Caught in the wild, they need to be purged before they are boiled with shrimp boil, I think. I only know the Chicken Marengo recipe from Fanny Farmer's cookbook, a wimpy version without the mudbugs. Yes, yes, to both butter and remoulade. I think you can see them faintly at the top of the photo. Didn't get back to you sooner because Monday was dog school day and I took little Roux to the big city for lessons. She wasn't the worst dog there, until she discovered people had been dropping crumbs of treats as they heeled their dogs around the square, and then she spent the rest of the lesson snuffling about for them. Do truffles exist in America?

Hi Phil,
Yes, I definitely will try Jay's marinade. At the moment, my problem is that I'm like a kid in the candy store. Everything sounds delicious and I want to do them all. But the marinade is high on the list. All I need is an appropriate opportunity.

Odd that you should mention "hot pockets". As you know, I am still experimenting with German style food, and recently tried a concoction called Bierocks. Basically, it is a combination of beef and cabbage, baked in a wrapper of dough. It does remind me of a hot pocket, but is much more tasty. I wouldn't like it for a steady diet, but it is fun to try new things.

You are right, of course. I got the recipe from Stephen Block, who said it was not really a German dish. He called it the German version of a Russian pirogue or a Cornish pastry, and said that practically all cultures have their version of a meat pie. It probably is the same thing as the Piroski you mentioned.

This is not culinary but it is such a great resource I have to tell everyone about it. This site is an open source audio download site and all the files are available for free and completely legal. There is contemporary music, talk shows and my favorite, an entire catalog of radio shows from radios golden age. Mystery's, comedy's, science fiction, and old horse operas like Gunsmoke are all here, available to download to your computer, and listen to on an Ipod or burn to a disk and play in your car. http://www.archive.org/details/opensource_audio
Take a ride in the time machine, you'll love it.

Thanks Phil,
The site looks great. I'll most likely learn more here that I can contribute. I know there are some great cooks onboard.

Nice site, Phil.

Thank you!! He's my little peanut. Also, thanks again for the wonderful meal at B44 when my mom and I were visiting. I still think of it on a regular basis...as ridiculous as that sounds.
